Quelle merveille d’écouter ses habitants parler dans un aranais que l’on comprend parfois à demi-mots. Croisement de langues voisines comme la vie des habitants des Pyrénées à la croisée des chemins, l’Aranais est la langue occitane du Val d’Aran, avec des racines romanes et une variante du gascon. Les résidents de ce coin d’Occitanie la chérissent comme un trésor.   Le Val d’Aran nous invite à un riche calendrier de rassemblements. Des fêtes où l’important sont les retrouvailles entre amis et familles qui parlent la même langue et qui se savent unis par une identité. Au rassemblement de Montgarri début juillet, on se souvient comment jadis l’Aran s’ouvrait de nouveau aux régions voisines après l’hiver. La nuit, la passion pour la terre nous révèle également un éventail de croyances que l’on défend comme une véritable religion dans certains foyers. La vallée se livre aux esprits de la nuit et la de nature la nuit de la Saint-Jean à l’occasion de la Crema der Haro de Les. Le village brûle ainsi un gros tronc de sapin sur la place dans un rituel qui rend hommage à la nature et à ses habitants. En voyant ainsi brûler le Haro et les halhes, des flambeaux fabriqués en écorce de cerisier, nous savons qu’il n’y a pas de meilleure façon d’accueillir le nouvel été. La même nuit, on retrouve également à Arties era crema deth taro, une autre nuit de feu, de musique et d’émotions à la mémoire des agriculteurs et des habitants du village qui ont préservé et travaillé cette terre. De ce travail manuel est née une gastronomie qui nous invite à sa table. L’Olla Aranesa se présente comme une recette qui réunit tout ce que le paysage a de bon. Nous mangeons en sachant que chaque cuillerée nous donne la force nécessaire pour vivre au cœur des Pyrénées.
